SCRAMBLED GLENFIN DUCK EGGS

(This recipe is the based on 2 duck eggs per person)

 

INGREDIENTS

2 Glenfin Duck Eggs

20gms butter

50mls milk or cream

Salt and Ground White Pepper

 

METHOD

Break the duck eggs into a bowl and whisk until smooth.
Heat a small pot over a medium heat.
Add the butter to the pot and melt but do not let brown.
Add the beaten duck eggs.
Using a wooden spoon or spatula stir the mixture making sure it 

does not stick to the bottom of the pot.
When the mixture begins to thicken add the milk or cream and season 

with the salt and pepper.
Stir until the mixture begins to thicken again and remove from the 

heat keep folding the cooking eggs and serve immediately.
