BAKED GLENFIN DUCK EGGS (EN COCOTTE)

INGREDIENTS

2 Glenfin Duck Eggs

Butter

Salt and White Pepper

2 Ramekins  (glass or porcelain)

 

 

METHOD

Preheat the oven to 180°.
Rub the inside of the ramekins with butter and sprinkle lightly with salt and pepper.
Crack a duck egg into each ramekin and place the ramekins into a deepish oven tray (roasting dish or some thing like that).
Pour enough boiling water into the oven tray to come half way up the side of the ramekins, making sure not to slash or pour any water into the ramekins.
Put into the pre-heated oven and cook for 8 to 10 minutes until the white has set but just before the yolk is cooked through.
If you want the duck eggs to be cooked more, cover the ramekins with a small saucer and leave in the oven for 2 minutes more.
Serve immediately from the oven.
