Serves 6

1 tsp oil, for frying

4 bacon rashers

5tbsp green peas

5 Glenfin Duck Eggs

125ml single cream

3tbsp feta cheese, crumbled


-Preheat the oven to 190Degrees/gas mark 5 and lightly greas two 12 hole bun tins.
-Heat the oil in a frying pan and fry the bacon. Then remove from the pan and drain on kitchen paper.
-Once cooled down, chop into small pieces and combine evenly into the hole of the tins.
-Whisk the eggs and cream in a jug, add the feta and season to taste and pour over the pea and bacon mixture.
-Bake for 10-12 minutes until golden and set.


This recipe was taken from Easy Food Magazine Summer Special 2009 where hen eggs were substituted with Glenfin Duck Eggs.
